The MyMT™ KITCHEN: Feel sustained throughout your day with these Danish Crackers

As the body undergoes a number of physical changes during menopause, it is now known that there are certain foods that are better for us in midlife and beyond. This includes many of the ingredients in these delicious Danish crackers. 
 
For example, rolled oats are known to help reduce cholesterol due to the beta-glucans in them, and did you know that pumpkin seeds contain phyto-oestrogens (plant-based oestrogens) and pumpkin-seed oil is increasingly recognised as helping to increase the ‘good’ high density lipoprotein (HDL) cholesterol concentrations, which in turn helps reduce our risk of heart disease. (Gossell-Williams, 2007)
 
But perhaps the best thing about having these crackers in your pantry, is that when you are too busy to cook, or you want a healthy snack on the run, then you can grab them and stack them with your favourite toppings. 
 
The MyMT™ KITCHEN: Snack on these delicious Danish Seed Crackers throughout your day to keep you feeling sustained.  

Ingredients (you will need a rolling pin)

  • 1/4 cup rolled oats

  • 1/4 cup linseeds

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds
  • 1/4 cup sesame seeds

  • A bit less than a cup of Gluten Free flour

  • 1 tsp salt

  • 1/2 cup parmesan

  • 1/2 cup water

  • 1/4 cup olive oil

Method

  1. Heat oven to 180 degrees Celsius (350 Fahrenheit).
  2. Mix together all ingredients.
  3. Place baking paper on a large oven tray and roll out the mixture on the
    tray until it is very thin.
  4. Make cut marks in the mixture to resemble the size crackers you
    would like.
  5. Bake for 20 minutes. Enjoy them hot or cold!
