The MyMT™ KITCHEN: Your Sensational Gut-friendly Salade Nicoise

Working as a young nurse in the south of France in Cannes many, many years ago now, I came across my first Salade Niçoise. I didn’t know that this salad, with it’s high protein intake, originates in the French riviera town of Nice. Whilst I never used to have the eggs with it at the time, a traditional Salade Niçoise is served on a large platter, and it includes fresh tomatoes, sliced hard-boiled eggs, tuna and an olive oil dressing.

Whilst there are many renditions of this classic French salad, I love it’s simplicity as a meal that is ‘gut-friendly’. Not only does the tuna help to supply zinc to your ageing gut, but the salad itself is high in fibre and the cold potatoes help to give your gut resistant starch. 

No matter the season you are in, I hope you can give this delicious French salad a go!

The MyMT™ KITCHEN: Salad Niçoise 

INGREDIENTS: 

  • Lettuce, spinach or rocket
  • Green beans
  • Capsicum
  • A can of tuna (I choose a water-based tuna)
  • Eggs
  • Sundried tomatoes
  • Parsley 
  • Sunflower seeds and pumpkin seeds
  • Cooked, cold potatoes (optional)

Method: 
1. Everyone likes their eggs a little different, so boil them for however long you like. I boil mine for approximately 10 minutes. 

2. While the eggs are cooking, place 2 inches of boiling water in another pot and place it on medium heat so the water is still simmering. Add the green beans and cook for approximately 5 minutes. 

3. Add all other salad ingredients into a bowl and then add the eggs and beans when they are ready. 

4. Serve with a dressing of your choice. I love olive oil, lemon and balsamic vinegar.
